Fritter Batter
- 1 cup sweetcorn kernels (fresh or canned, drained)
- 3/4 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1 tablespoon oil (for batter mix)
For Frying
- 1/4 cup vegetable oil or any neutral oil
- Prepare the Batter: In a mixing bowl, combine the sweetcorn kernels, flour, eggs, milk, salt, and a tablespoon of oil. Stir well until you get a thick batter with all ingredients evenly incorporated.
- Heat the Oil: Pour vegetable oil into a frying pan to cover the bottom about 1/4 inch deep. Heat it over medium heat until hot but not smoking.
- Fry the Fritters: Using a spoon, drop spoonfuls of the batter carefully into the hot oil, spacing them apart. Fry until the underside is golden brown, about 2-3 minutes, then flip and cook the other side until golden and cooked through, another 2-3 minutes.
- Drain and Serve: Remove the fritters with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Serve warm with your choice of dip or sauce.
