Ingredients

Scale

Pizza Base

  • 345 g Pillsbury Thin and Crispy Pizza Crust Dough (12 oz)

Cheese and Cream

  • 200 g Crème fraîche (7 oz) (or ricotta)
  • 200 g Parmesan cheese (7 oz) (grated)
  • 200 g Crème fraîche (7 oz) (or sour cream) for topping

Toppings

  • 1 Red onion, finely chopped
  • 4 tbsp Fresh dill, finely chopped
  • 57 g Black or red lump-fish caviar (roe) (2 oz)

Instructions

  1. Preheat the Oven: Preheat your oven to 250°C (482°F) to ensure it’s hot enough to achieve a crispy crust and melting cheese.
  2. Prepare Baking Sheets: Line two sheet pans with parchment paper to prevent sticking and for easy cleanup.
  3. Roll Out Dough: Roll out each piece of the pizza dough thinly and evenly on the prepared baking sheets.
  4. Spread Crème Fraîche: Evenly spread 200 g of crème fraîche (or ricotta) over the rolled-out dough, creating a smooth base layer.
  5. Add Parmesan Cheese: Sprinkle the grated Parmesan cheese generously over the crème fraîche layer to add rich flavor and a golden crust on baking.
  6. Bake the Pizza: Place the prepared pizzas in the preheated oven and bake for 7 to 10 minutes, or until the cheese has melted and the dough is a light golden color.
  7. Cut into Squares: Remove the pizzas from the oven and cut into approximately 30 small squares, suitable for serving bite-sized portions.
  8. Garnish: Sprinkle each square with finely chopped red onion and fresh dill for freshness and color.
  9. Add Dollops of Crème Fraîche: On each square, add a small dollop of crème fraîche or sour cream to add creaminess and balance the salty caviar.
  10. Top with Caviar: Finish each piece with a small dab of black or red lump-fish caviar (roe), adding a luxurious burst of briny flavor.

Notes

  • Use fresh, high-quality lump-fish caviar for the best flavor and presentation.
  • You can substitute crème fraîche with sour cream or ricotta depending on availability and preference.
  • Serve these as elegant appetizers or snacks at gatherings or special occasions.
  • Ensure the oven is fully preheated to achieve a crisp and golden crust.
  • Handle the caviar delicately to maintain its texture and appearance.
  • If you prefer a thicker crust, roll the dough slightly thicker, but adjust baking time accordingly.
