Ingredients

Scale

Pizza Base

  • Dough for one large pizza (refer to the linked recipe)

Mashed Potato Topping

  • 5 small Yukon Gold potatoes
  • 4 tbsp butter
  • 2 tbsp whipped cream cheese
  • 2 tbsp sour cream
  • 1 tsp salt

Additional Toppings

  • 1 1/2 cups (6 oz) shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • Fresh chives, chopped
  • Sour cream for topping
  • Olive oil for brushing dough

Instructions

  1. Cook Potatoes: Peel and chop the Yukon Gold potatoes and place them in a saucepan. Fill the saucepan with cold water so that the water level is about an inch above the potatoes. Simmer the potatoes on the stovetop until they are fork-tender, which typically takes about 15-20 minutes. Drain the water once cooked.
  2. Mash Potatoes: In the drained potatoes, add butter, whipped cream cheese, 2 tablespoons of sour cream, and salt. Mash everything together until the mixture is smooth and creamy. Set the mashed potatoes aside for later use.
  3. Prepare Oven and Dough: Preheat your oven to 500 degrees Fahrenheit, placing a pizza stone inside to heat. Meanwhile, shape your pizza dough on a pizza peel or baking sheet and brush it lightly with olive oil to prevent sogginess.
  4. Assemble Pizza: Gently and evenly spread the mashed potatoes over the pizza dough, being careful not to tear the crust. Sprinkle the shredded cheddar cheese evenly over the mashed potatoes. You can adjust the amount of cheese to your preference.
  5. Bake Pizza: Transfer the pizza to the preheated pizza stone in the oven. Bake for 10-14 minutes, or until the cheese is bubbling and beginning to brown and the crust is fully cooked and golden.
  6. Add Final Toppings and Serve: Remove the pizza from the oven and top with the cooked and crumbled bacon and freshly chopped chives. Slice the pizza and serve with sour cream on the side for an optional creamy topping.

Notes

  • Yukon Gold potatoes are preferred for their creamy texture and buttery flavor, but russet potatoes can be used as a substitute.
  • Ensure the pizza stone is fully preheated to achieve a crispy crust.
  • Use fresh chives for a mild onion flavor that complements the richness of the mashed potatoes and bacon.
  • Sour cream topping is optional but adds a nice tangy contrast to the creamy and savory pizza.
  • You can prepare bacon in advance to save time during assembly.
