  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the vegetables.
  2. Prepare the vegetables: Chop the mixed vegetables into bite-sized pieces, toss them with 1 tablespoon of olive oil, salt, pepper, and half of the spice mix to evenly coat them.
  3. Roast the vegetables: Spread the vegetables on a baking sheet in a single layer and roast for 25-30 minutes, turning halfway through, until they are tender and slightly caramelized.
  4. Cook the lentils: While the vegetables are roasting, combine the lentils and water (or vegetable broth for extra flavor) in a pot. Bring to a boil, then reduce to a simmer and cook uncovered for 20-25 minutes until tender and water is absorbed. Drain any excess liquid if necessary.
  5. Combine spices and garlic: In a small pan, heat 1 tablespoon olive oil over medium heat, add minced garlic and remaining spices, and sauté for 1-2 minutes until fragrant. Remove from heat.
  6. Mix lentils and vegetables: Transfer the cooked lentils to a large bowl, add the roasted vegetables and the spiced garlic oil. Gently toss to combine all flavors evenly.
