Rotel Dip Recipe

4.5 from 102 reviews

A deliciously creamy and spicy Rotel dip combining seasoned ground beef, melted Velveeta cheese, and zesty Rotel tomatoes, perfect for parties and casual snacking.

Ingredients

Scale

Meat

  • 1 pound lean ground beef

Seasoning

  • 2 Tablespoons Homemade Taco Seasoning

Other Ingredients

  • 10 ounce can Rotel tomatoes (diced tomatoes with green chilies)
  • 16 ounce Velveeta Cheese (processed cheese, cubed)

Instructions

  1. Cook the Ground Beef: In a medium sized skillet over medium-high heat, add the lean ground beef. Cook and crumble it until no longer pink, ensuring it’s evenly browned. Drain any excess grease to keep the dip less oily.
  2. Add Seasoning and Ingredients: Stir in the 2 tablespoons of homemade taco seasoning to the cooked beef. Then add the entire 10 ounce can of Rotel tomatoes and 16 ounces of cubed Velveeta cheese to the skillet.
  3. Melt and Combine: Continue stirring over medium heat until the Velveeta is completely melted and all ingredients are thoroughly combined into a smooth, creamy dip.
  4. Serve: Pour the hot Rotel dip into your desired serving dish and serve immediately with tortilla chips or your favorite dippers.

Notes

  • Use lean ground beef to reduce grease and keep the dip flavorful but not greasy.
  • Homemade taco seasoning can be substituted with store-bought for convenience.
  • For a spicier kick, use hot Rotel tomatoes instead of mild.
  • This dip is best served immediately while warm but can be gently reheated on the stovetop or in the microwave.
  • Great for game days, parties, or as a hearty appetizer.
