Chicken

- Sear the chicken: Heat olive oil in a large heavy-bottomed skillet or saucepan over medium-high heat. Add the chicken thighs skin-side down and cook for about 5-7 minutes until the skin is golden and crisp. Flip and brown the other side for an additional 3-4 minutes. Remove chicken and set aside.
