For the Crust
- 2 1/2 cups All-purpose flour
- 1 tsp Salt
- 1 cup Unsalted butter, cold and cubed
- 6 tbsp Cold water (adjust as needed)
For the Filling
- 1 lb Ground beef or Italian sausage (choose preferred protein)
- 1 tbsp Olive oil (for sautéing)
- 1/2 cup Onion, chopped
- 1 cup Bell peppers, diced
- 1/2 cup Mushrooms, sliced
- 1 1/2 cups Marinara sauce (store-bought or homemade)
- 1 tsp Italian seasoning (optional)
- 1/2 tsp Garlic powder (optional)
- 1/4 tsp Black pepper (optional)
- 1 1/2 cups Mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, shredded
- 12 slices Pepperoni (optional)
For Assembly
- 1 large Egg (for egg wash)
- Make the Crust: In a mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed unsalted butter and cut it into the flour mixture with a pastry cutter or your fingers until it resembles coarse crumbs.
- Form the Dough: Gradually add the cold water, starting with 6 tablespoons, mixing gently until the dough comes together. Add more water if necessary, but avoid making it too sticky. Form the dough into a ball and flatten it into a disk. Wrap in plastic and chill in the refrigerator for 30 minutes.
- Prepare the Filling: Heat olive oil in a skillet over medium-high heat. Add the ground beef or Italian sausage and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
- Sauté Vegetables: Add chopped onions, diced bell peppers, and sliced mushrooms to the skillet. Cook until the vegetables soften, about 5 minutes.
- Add Sauce and Seasonings: Stir in the marinara sauce along with Italian seasoning, garlic powder, and black pepper if using. Cook the mixture for a few more minutes until well combined and heated through. Remove from heat and let the filling cool slightly before stirring in the shredded mozzarella and parmesan cheeses.
- Assemble the Pot Pie: Preheat the oven to 425°F (220°C). Roll out the chilled dough on a floured surface to fit your baking pan. Press the bottom crust into the pan evenly.
- Add Filling and Toppings: Spoon the cooled meat and vegetable filling evenly over the bottom crust. Layer pepperoni slices on top if desired.
- Top with Second Crust: Roll out the second portion of dough and cover the filling. Seal the edges by pressing them together firmly. Brush the top crust with the beaten egg for a shiny, golden finish, and cut a few small vents in the crust to allow steam to escape.
- Bake the Pot Pie: Place the pot pie in the preheated oven and bake at 425°F (220°C) for 15 minutes to set the crust. Then reduce the oven temperature to 375°F (190°C) and bake for an additional 25 to 30 minutes until the crust is golden brown and the filling is bubbly.
- Serve: Allow the pizza pot pie to cool for a few minutes before cutting into slices. Serve warm and enjoy this comforting pizza-inspired dish.
Notes
- You can customize the filling by adding your favorite pizza toppings such as olives, mushrooms, or different vegetables.
- If using store-bought pie crust, you can save time by skipping the dough-making steps.
- The pepperoni is optional but adds an authentic pizza flavor.
- Letting the filling cool before adding cheese helps prevent the cheese from melting too quickly and losing texture.
- Adjust the water in the dough gradually; adding too much can make the crust tough.
