  • Approximately 6 frozen breakfast sausage links, microwaved and diced
  • Diced bell pepper, pre-chopped

Instructions

  1. Preheat and prepare muffin pan: Preheat your oven to 400 degrees Fahrenheit and generously grease a standard-sized muffin pan to prevent sticking.
  2. Soften and prepare tater tots: Microwave the tater tots for a few minutes until they are soft enough to be smashed easily. Place 3 tots into each muffin cup, then press them down firmly with the bottom of a small cup to form a crust.
  3. Bake the tater tot crust: Bake the smashed tater tots in the oven at 400°F for 10 minutes to firm up the crust.
  4. Lower oven temperature: After removing the muffin pan from the oven, reduce the oven temperature to 350 degrees Fahrenheit for baking the omelets.
  5. Add meat and veggies: Evenly distribute the diced, microwaved breakfast sausage and diced bell peppers into each muffin cup over the pre-baked tater tot crusts.
  6. Prepare egg mixture: In a bowl, scramble the eggs with milk and seasoning of your choice. Pour the egg mixture evenly into each muffin cup, filling about 90% full to allow space for the eggs to expand during baking.
  7. Add cheese and bake: Sprinkle shredded cheese on top of each filled muffin cup. Bake at 350°F for 20 minutes or until the eggs are fully cooked and set.
