Ingredients

Scale

Tortillas

  • 8 corn tortillas (6-inch size)
  • 1 tablespoon cooking oil (canola or vegetable oil)

Chicken Mixture

  • 8.5 ounces canned corn (drained)
  • 1 1/2 cups cooked chicken, shredded
  • 8 ounces salsa (store-bought or homemade)
  • 2 tablespoons taco seasoning mix
  • 15 ounces black beans (rinsed and drained)

Toppings

  • 2 cups shredded Colby Jack cheese
  • Fresh cilantro leaves (for garnish)
  • Tomatoes, diced (for garnish)

Instructions

  1. Prepare and Bake the Tortillas: Preheat your oven to 450°F (232°C). Lay the 8 corn tortillas on a rimmed baking sheet and brush each side evenly with 1 tablespoon of cooking oil to create a thin shiny coating. Bake for 10 minutes total, flipping tortillas and rotating the pan halfway through. Check every 2 to 3 minutes to avoid burning. Note flour tortillas require less time.
  2. Cook the Chicken Mixture: While tortillas bake, heat a medium-large saucepan over medium heat. Add shredded chicken, canned corn, salsa, taco seasoning, and rinsed black beans. Stir occasionally and cook until thoroughly heated, about 5 minutes.
  3. Assemble and Melt Cheese: Remove baked tortillas from the oven and add about 1/2 cup of the hot chicken mixture evenly on each tortilla. Sprinkle 1/4 cup of shredded Colby Jack cheese on top. Return tortillas to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  4. Garnish and Serve: Remove the tostadas from the oven and garnish each with fresh cilantro leaves and diced tomatoes. Serve immediately to enjoy the crispy, cheesy, and flavorful Mexican tostadas.

Notes

  • Use canola or vegetable oil for brushing tortillas for better crispiness.
  • Keep a close eye on tortillas while baking to prevent burning—ovens vary.
  • Shredded rotisserie chicken works great for convenience and flavor.
  • Optional toppings can include sour cream, avocado slices, or hot sauce for extra flavor.
  • If using flour tortillas, reduce baking time to prevent over-crisping.
