For the Lamb & Chickpea Fritters
- 500g lamb mince
- 1 cup cooked chickpeas, mashed
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp ground cinnamon
- 1 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- 2 tbsp fresh parsley, chopped
- 1 egg, lightly beaten
- 2–3 tbsp plain flour (or as needed for binding)
- Oil for frying (vegetable or olive oil)
For the Wraps
- 4 large flatbread wraps
- Optional: Lettuce, tomato slices, cucumber, yogurt or tahini sauce for serving
- Prepare the Fritter Mixture: In a large bowl, combine the lamb mince, mashed chickpeas, chopped onion, minced garlic, ground cumin, coriander, cinnamon, smoked paprika, salt, pepper, and chopped parsley. Mix well to evenly distribute the spices.
- Bind the Fritters: Add the beaten egg and flour gradually, mixing until the mixture holds together well enough to form small patties without falling apart. Adjust flour quantity as needed.
- Shape the Fritters: Using your hands, form the mixture into small, round fritters about the size of a golf ball, then gently flatten them to about 1 cm thickness.
- Cook the Fritters: Heat a thin layer of oil in a large skillet over medium heat. Fry the fritters for about 4-5 minutes on each side, or until they are cooked through and nicely browned on the outside.
- Warm the Wraps: While the fritters are cooking, warm the flatbreads either in a dry pan over low heat or in a preheated oven wrapped in foil for a few minutes until soft.
- Assemble the Wraps: Place 2-3 fritters on each warm wrap. Add optional fresh vegetables such as lettuce, tomato, and cucumber, and drizzle with yogurt or tahini sauce for extra flavor. Roll up the wraps tightly to serve.

- You can substitute lamb mince with beef or turkey mince if preferred.
