Ingredients

Scale

Honey Mustard Glaze

  • 1/4 cup apple cider vinegar
  • 4 Tbsp. honey
  • 6 Tbsp. grainy Dijon mustard
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp. low-sodium soy sauce
  • 1 tsp. minced garlic (about 2 cloves)
  • dash of cayenne pepper
  • 1/2 tsp. sea salt
  • fresh cracked black pepper, to taste

Main Ingredient

  • 14 ounces skinless, boneless Grouper
  • freshly minced parsley, as garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (180°C) to prepare it for baking the grouper evenly.
  2. Prepare Glaze: In a small mason jar, measure and combine all the honey mustard glaze ingredients — apple cider vinegar, honey, grainy Dijon mustard, extra virgin olive oil, low-sodium soy sauce, minced garlic, cayenne pepper, sea salt, and black pepper. Close the jar tightly and shake vigorously until the mixture is well blended.
  3. Prepare Grouper: Rinse the grouper fillets under cold water and drain them thoroughly. Pat the fish dry carefully with paper towels to remove excess moisture, which helps the glaze adhere better during baking.
  4. Marinate Fish: Place the dried grouper fillets in a 2.5 quart (2.3 liter) round or oval baking dish. Pour approximately one-third cup of the honey mustard glaze over the fish to coat it evenly. Allow the fish to marinate while the oven reaches the desired temperature.
  5. Bake Fish: Once the oven is preheated, place the baking dish with the marinated grouper on the middle rack. Bake for 25 to 30 minutes or until the fish flakes easily with a fork or reaches an internal temperature between 142°F and 145°F at the thickest part.
  6. Serve: Remove the baked grouper from the oven and transfer it to serving plates. Spoon additional honey mustard glaze from the baking dish or remaining jar over the top of the fish. Garnish generously with freshly minced parsley before serving to enhance both flavor and presentation.

Notes

  • Use a food thermometer to ensure the fish is cooked properly to 142°F – 145°F for optimal safety and texture.
  • Allowing the fish to marinate briefly helps infuse the flavors but avoid over-marinating to prevent overpowering the delicate fish flavor.
  • For a spicier kick, increase the amount of cayenne pepper according to preference.
  • Substitute grouper with other firm white fish like cod or snapper if grouper is unavailable.
  • Serve with steamed vegetables or a fresh salad for a well-rounded meal.
