Shortbread Layer
- ¼ cup granulated sugar
- 1 ¼ cup all-purpose flour
- ⅔ cup butter, softened
Caramel Layer
- ½ cup light brown sugar
- ½ cup butter
- ½ cup sweetened condensed milk
- 2 tablespoons corn syrup
Chocolate Layer
- 24 ounces chocolate almond bark
- 1 tablespoon oil (vegetable or canola oil)
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper to prevent sticking.
- Make the shortbread base: In a medium bowl, combine the flour and granulated sugar. Cut the softened butter into chunks and add to the bowl. Using a fork, mix and mash the butter into the dry ingredients until the mixture becomes crumbly. Press this mixture evenly into the prepared pan and bake for about 20 minutes until set and lightly golden.
- Prepare the caramel: While the shortbread bakes, melt butter in a medium saucepan over medium heat. Add brown sugar, corn syrup, and sweetened condensed milk, stirring constantly. Bring the mixture to a boil and cook for 3-4 minutes, then remove from heat and continue stirring for 2 minutes until caramel thickens.
- Assemble caramel layer: Pour the thickened caramel evenly over the cooled shortbread layer. Allow it to cool and set until firm. To speed this up, place the pan in the refrigerator for about 10 minutes.
- Cut into bars: Once caramel is firm, cut the layered dessert into 2-inch strips, mimicking the size of mini Twix bars.
- Melt the chocolate coating: Combine chocolate almond bark and oil in a microwave-safe bowl. Microwave in 10-second intervals, stirring between each, until fully melted and smooth.
- Dip the bars in chocolate: Line a flat tray with parchment paper. Using two forks, hold a bar on one fork and drizzle melted chocolate over the top and sides with the other fork. Scrape excess chocolate off the bottom of the bar with a fork or the side of the bowl before placing it on the parchment paper. Repeat for all bars.
- Set the chocolate: Allow the chocolate coating to firm up at room temperature or refrigerate briefly before serving.
