Instructions

  1. Prepare the Crust: Grind oats or rice flour into a fine powder using a food processor or blender. Mix ½ cup of ground oats with 2 tablespoons of unsweetened applesauce or mashed banana. Press this mixture firmly into the bottom of your silicone mold to form a crust. Optionally, bake the crust at 350°F (175°C) for 10 minutes for extra firmness, or skip baking for a no-bake crust.
  2. Make the Filling: In a mixing bowl, combine 1 cup of plain Greek yogurt or cottage cheese, ¼ cup of unsweetened applesauce or mashed banana, 1 egg (or flaxseed mixture as an egg substitute), and 1 teaspoon of vanilla extract if using. Blend using a hand mixer or whisk until the mixture is smooth and creamy.
  3. Assemble the Cheesecake: Pour the filling over the prepared crust in the silicone mold. Use a spatula to spread evenly and eliminate air bubbles. Add optional fresh fruit slices on top for decoration and extra flavor if desired.
