Ingredients

Scale

Filling

  • 1/2 cup crushed graham cracker crumbs (finely crushed, about 810 crackers)
  • 1/2 cup milk chocolate pieces (Ghirardelli chocolate chips recommended)
  • 1 cup small marshmallows (fresh, not stale)

Quesadilla Base

  • 2 large wheat tortillas (soft and pliable for folding)
  • About 2 tbsp softened butter (for greasing)

Optional Topping

  • Powdered sugar for dusting (optional, for sweetness and presentation)

Instructions

  1. Prepare Your Mise en Place and Heat the Griddle: Begin by crushing the graham crackers into fine crumbs using a rolling pin inside a sealed bag. Measure out the marshmallows and milk chocolate pieces. Have softened butter ready for spreading. Preheat your Blackstone griddle (or any flat griddle) to medium-low heat to ensure it’s ready for cooking.
  2. Butter and Layer the Tortillas with Filling: Quickly spread a thin, even layer of softened butter on one side of each tortilla. Place the first tortilla on the griddle, buttered side down. Immediately and evenly sprinkle marshmallows, chocolate pieces, and graham cracker crumbs over the non-buttered side. Top it with the second tortilla, buttered side up, to create a sandwich with the fillings inside.
  3. Cook and Flip Until Golden and Melted: Let the quesadilla cook undisturbed for 2-3 minutes until the bottom tortilla is golden brown and crispy. Check the color carefully. Using a spatula, flip the quesadilla over and cook the other side for another 2-3 minutes until it’s golden brown and the filling starts to ooze from the edges. Keep the heat medium-low to prevent burning and ensure the inside melts thoroughly.
  4. Cool and Slice Into Wedges: Remove the quesadilla from the griddle and transfer it to a cutting board. Allow it to cool for about 1 minute so the melted filling firms slightly. Slice into triangular wedges using a sharp knife or pizza cutter. Optionally, dust with powdered sugar to add sweetness and enhance the presentation. Serve warm and enjoy the gooey, crispy treat.

Notes

  • Use fresh marshmallows for the best melting results – stale marshmallows may not melt properly.
  • Maintain medium-low heat on your griddle to avoid burning the tortillas while allowing the fillings to melt thoroughly.
  • Softened butter spreads more easily and promotes even golden browning and crispiness on the tortilla exterior.
  • Crushing graham crackers finely ensures even distribution and texture inside the quesadilla.
  • Powdered sugar is optional but adds a lovely sweet finish and visual appeal.
