Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup cooked white rice

Sauces and Cheese

  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Tortillas and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: Brown the ground beef in a skillet over medium heat until fully cooked. Drain any excess grease, then stir in the taco seasoning along with 1/4 cup of water. Let it simmer for about 5 minutes to allow the flavors to meld.
  2. Warm the Tortillas: Heat the tortillas on a dry skillet or microwave briefly to make them pliable and easy to fold without tearing.
  3. Assemble the Burrito: Lay a warm tortilla flat on a clean surface. Spread a layer of cooked white rice, then add the seasoned ground beef. Drizzle with nacho cheese sauce and chipotle sauce, followed by dollops of sour cream. Top everything with shredded cheddar and mozzarella cheeses.
  4. Grill the Burrito: Preheat a clean skillet over medium heat and sprinkle about 2 tablespoons of shredded cheese onto the pan. Place the assembled burrito seam-side down onto the cheese to help seal it and cook until the cheese melts and forms a crispy golden crust. Carefully flip the burrito and repeat grilling on the other side for an additional 3 to 4 minutes until both sides are crisp and the cheese is melted.

Notes

  • Use homemade taco seasoning for a fresher taste and control over sodium levels.
  • Adjust the amount of chipotle sauce to control the spice level.
  • For a gooier burrito, add extra cheese inside or sprinkle on the grill surface.
  • You can substitute ground turkey or chicken for the beef for a lighter option.
  • Serve with salsa, guacamole, or additional sour cream on the side if desired.
