Ingredients

Scale

Phyllo Layers

  • 8 sheets of phyllo dough
  • 1 cup unsalted butter, melted

Custard Filling

  • 1 cup semolina flour
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Pinch of salt

Topping

  • 1/2 cup honey, warmed
  • 2 tbsp sesame seeds, toasted

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly to prevent sticking.
  2. Layer Phyllo Dough: Place one sheet of phyllo dough in the greased dish and brush it generously with melted butter. Repeat this process with 6 more sheets, stacking them neatly and brushing each with butter to ensure a crisp, golden texture.
  3. Make Semolina Custard: In a mixing bowl, whisk together semolina flour, eggs, granulated sugar, whole milk, ground cinnamon, ground nutmeg, and a pinch of salt until the mixture is smooth and well combined.
  4. Assemble Filling: Pour the prepared semolina custard mixture evenly over the layered phyllo base to create the pie’s filling.
  5. Top Phyllo Layers: Layer the remaining phyllo sheet(s) over the custard, brushing each sheet with melted butter. Once topped, lightly score the surface of the pie with a knife to facilitate even baking and slicing later.
  6. Bake the Pie: Bake the pie in the preheated oven for 40 to 45 minutes or until the phyllo top is golden brown and the custard is set.
  7. Cool and Add Toppings: Allow the pie to cool for 10 minutes after baking. Then drizzle warm honey evenly over the pie’s surface and sprinkle toasted sesame seeds on top.
  8. Serve: Slice the pie and serve warm or at room temperature for the best flavor and texture experience.

Notes

  • Be gentle when handling phyllo dough as it is delicate and can tear easily.
  • Ensure the honey is warmed before drizzling to allow it to spread smoothly over the pie.
  • To toast sesame seeds, heat them in a dry skillet over medium heat until golden and fragrant, stirring frequently.
  • Letting the pie cool slightly before serving helps the custard set fully for easier slicing.
  • This pie can be reheated gently in a low oven or served cold based on preference.
