Pasta

  • 8 oz twisted pasta (rotini or fusilli)

Sauce and Garnish

  • 3 tbsp unsalted butter
  • 3 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a rolling boil. Add the twisted pasta and cook until al dente, about 8 to 10 minutes. Reserve half a cup of pasta water before draining the pasta.
  2. Season and Sear the Steak: Toss the cubed sirloin with salt, pepper, garlic powder, and smoked paprika to coat evenly. Heat olive oil in a skillet over medium-high heat. Add the steak cubes and sear without moving for about two minutes to develop a good crust. Turn the cubes to brown all sides evenly, then remove from the skillet and set aside to rest.
  3. Create Garlic Butter Base: Reduce the heat to medium. Add unsalted butter to the skillet, scraping up any browned bits left from the steak. Stir in minced garlic and cook for 1 to 2 minutes until the garlic becomes golden and fragrant, careful not to burn it.
  4. Build Cajun Alfredo Sauce: Pour the heavy cream into the skillet with the garlic butter. Stir in the Cajun seasoning, additional garlic powder if desired, salt, and black pepper. Let the sauce simmer gently for 3 to 4 minutes until it thickens slightly. Remove the skillet from the heat and mix in the freshly grated Parmesan cheese until the sauce becomes creamy and smooth.
  5. Combine with Pasta: Add the drained pasta to the skillet and toss it well to coat in the creamy Cajun Alfredo sauce. If the sauce seems too thick, gradually add reserved pasta water until you reach your preferred consistency.
