  • 2 lbs sirloin steak (cut into bite size pieces – strip loin, strip steak or rib eye also work great)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon ground black pepper (or to taste)

Sauce

  • 2 tablespoons unsalted butter
  • 1 tablespoon Worcestershire sauce
  • 5 cloves garlic (minced)
  • 2 fresh rosemary sprigs
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Heat the oil: Place a large cast iron skillet over high heat and add the canola oil once the pan is hot to prepare for searing the steak.
  2. Cook the beef: Add the steak pieces to the hot oil and season generously with salt and pepper. Let them cook undisturbed for 2-3 minutes to develop a rich sear.
  3. Flip and cook: Stir or flip the steak pieces and cook for another 2-3 minutes until golden brown. Avoid overcrowding by working in batches if necessary.
  4. Transfer to a plate: Move the cooked steak bites to a plate and cover with foil to keep warm while preparing the sauce.
  5. Make the sauce: Reduce heat to medium and add the butter to the same skillet. Once melted, stir in minced garlic, rosemary sprigs, and red pepper flakes. Cook for about 30 seconds while stirring to infuse flavors.
  6. Add Worcestershire sauce: Stir in the Worcestershire sauce to create a flavorful garlic butter sauce.
  7. Discard the rosemary: Remove and discard the rosemary sprigs from the sauce to prevent overpowering the dish.
  8. Serve: Pour the garlic butter sauce over the steak bites, toss to coat evenly, then garnish with fresh parsley. Serve hot over mashed potatoes or with a fresh salad.
