Ingredients

Scale

Main Ingredients

  • 1 15oz can chickpeas, drained
  • 34 mini beets or 1 medium beet, cooked and peeled
  • 2 garlic cloves
  • 1 tbsp tahini
  • 1 tbsp olive oil
  • Juice of half a lemon
  • 1/4 tsp sea salt

Toppings & Garnishes

  • 2 tbsp feta cheese, crumbled
  • 2 tbsp chopped fresh parsley
  • 2 tbsp slivered almonds
  • 1 drizzle olive oil for garnish

To Serve

  • 10 toasted crostini
  • Raw vegetables for dipping (carrots, cucumbers, bell peppers, etc.)

Instructions

  1. Prepare the Ingredients: If using raw beets, roast or boil them until tender, then peel and allow to cool. Drain the canned chickpeas and peel the garlic cloves.
  2. Blend the Hummus: In a food processor, combine the chickpeas, cooked beets, garlic cloves, tahini, olive oil, lemon juice, and sea salt. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed to ensure even blending.
  3. Plate and Garnish: Transfer the beet hummus into a serving dish. Drizzle with a little extra olive oil, and sprinkle the crumbled feta cheese, chopped parsley, and slivered almonds evenly over the top for added texture and flavor.
  4. Serve: Serve the beet hummus with toasted crostini and an assortment of fresh raw vegetables for dipping. Enjoy immediately or refrigerate for later use.

Notes

  • Roasting the beets can enhance their sweetness and flavor before blending.
  • For a smoother hummus, peel the chickpeas before blending, though this step is optional.
  • You can substitute feta with goat cheese or omit for a vegan version.
  • Adjust lemon juice and salt according to your taste preference.
  • Store leftover hummus in an airtight container in the refrigerator for up to 3 days.
