Ingredients

Scale

Pasta and Cheese

  • 16 oz linguini (you can also use fettucini, spaghetti, bucatini, etc.)
  • 1/4 cup butter (softened for buttering the casserole dish)
  • 2 cups mozzarella cheese (shredded)
  • 1 cup cheddar cheese (shredded)
  • 1/4 cup parmesan cheese (grated)

Chicken

  • 1 rotisserie chicken (shredded)

Sauce Base

  • 2 (10.5 oz) cans cream of chicken condensed soup
  • 1 (8 oz) block cream cheese (softened, make sure it’s soft enough to be whisked in the sauce)
  • 5 garlic cloves (minced)
  • 1 cup sour cream
  • 1.5 cups chicken broth
  • 1 tsp dried parsley (plus more for topping)
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
  2. Cook Pasta: Boil the linguini in salted water to al dente according to the package instructions. Drain and set aside while you prepare the sauce.
  3. Make Sauce Base: In your largest mixing bowl, combine the cream of chicken soup, softened cream cheese, minced garlic, sour cream, chicken broth, dried parsley, pepper, and Italian seasoning. Whisk everything together until smooth and well combined.
  4. Combine Ingredients: Add half of the shredded mozzarella and cheddar cheeses, the shredded rotisserie chicken, and the cooked noodles to the sauce base. Toss gently until the noodles are evenly coated and all ingredients are well combined.
  5. Prepare Casserole Dish: Butter the bottom and sides of a casserole dish using the softened butter to prevent sticking and enhance flavor.
  6. Assemble Casserole: Transfer the pasta mixture into the prepared casserole dish, spreading it evenly. Sprinkle the remaining shredded mozzarella and cheddar cheeses on top, then dust with additional dried parsley.
  7. Bake: Place the casserole in the oven and bake for 35 minutes, or until the top is bubbly and golden brown.
  8. Serve: Remove from the oven and optionally sprinkle with seasoning salt and red pepper flakes for an added kick. Serve warm with dinner rolls or Texas toast, and a side of steamed broccoli or salad for a complete meal.

Notes

  • You can substitute linguini with other pasta types like fettucini, spaghetti, or bucatini based on preference or availability.
  • Make sure the cream cheese is softened well to blend smoothly into the sauce for a creamy texture.
  • If you prefer less sodium, consider using low-sodium chicken broth and cream of chicken soup.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • Add a pinch of nutmeg or fresh herbs like basil for a flavor variation.
  • For a spicier version, add a pinch of cayenne pepper or chopped jalapeños to the sauce base.
