A decadent and easy-to-make Brownie Ice Cream Cake featuring rich homemade brownies layered with your favorite ice cream flavors and topped with warm fudge sauce for an irresistible dessert perfect for any occasion.

Ingredients

Scale

Brownie Layer

  • 1 box brownie mix (18.3 oz), prepared as instructed

Ice Cream Layers

  • 2 pints ice cream (choose your favorite flavors)

Topping

  • 1 cup fudge sauce, heated

Instructions

  1. Prepare and Bake the Brownies: Begin by preparing the brownie mix as per the instructions on the box. Pour the batter into a 9 x 13-inch pan and bake according to the recommended baking time. Once baked, allow the brownies to cool completely in the pan before proceeding.
  2. Cut and Layer the Brownies and Ice Cream: Using a sharp knife or a cake ring, cut out two 6-inch circles from the cooled brownie slab. Place one brownie circle at the bottom of a 6-inch springform pan. Evenly spread one pint of your chosen ice cream over this brownie base.
  3. Add the Second Brownie Layer and Ice Cream: Place the second brownie circle directly on top of the first ice cream layer. Spread the remaining pint of ice cream evenly across the top of this second brownie layer, smoothing it carefully to create an even surface.
  4. Freeze and Set the Ice Cream Cake: Cover the assembled layers with plastic wrap to protect from freezer burn. Return the springform pan to the freezer and allow the cake to set and harden for at least a few hours, preferably overnight, until completely firm.
  5. Serve and Garnish: About 5 minutes before serving, remove the ice cream cake from the freezer to allow it to soften slightly for easier slicing. Carefully unlock and remove the springform pan. Pour heated fudge sauce on top and garnish with pieces of leftover brownies for added texture and flavor. Slice and enjoy your delicious brownie ice cream cake!

Notes

  • Use high-quality ice cream flavors for the best taste and texture.
  • Ensure brownies are fully cooled before cutting to prevent crumbling.
  • If you don’t have a springform pan, use a cake ring and line with parchment paper for easier removal.
  • You can substitute fudge sauce with caramel or berry sauce if preferred.
  • Store leftovers covered in the freezer to maintain freshness.
