Shortbread Crust
- 1 cup Cold Butter
- 2 cups All-Purpose Flour
- 3/4 cup Granulated Sugar
Caramel Topping
- 1 cup Granulated Sugar
- 1/2 cup Unsalted Butter
- 1/2 cup Heavy Cream
- 1 cup Toasted Pecans
- 1 teaspoon Sea Salt
Chocolate Topping & Decoration
- 2 cups Chocolate Chips (semi-sweet or milk)
- 1/2 cup Extra Pecans (for decoration)
- Preheat & Prepare Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the cold butter, all-purpose flour, and 3/4 cup granulated sugar. Mix these ingredients until the texture becomes crumbly. Press this mixture evenly into a lined 9×13-inch baking dish. Bake the crust for 15-18 minutes, or until it turns a nice golden color.
- Make Caramel: In a saucepan over medium heat, combine 1 cup granulated sugar and 1/2 cup unsalted butter. Stir continuously until the mixture is melted and smooth, about 5 minutes. Whisk in 1/2 cup heavy cream until fully incorporated, creating a creamy caramel sauce. Fold in 1 cup toasted pecans for added crunch.
- Assemble & Bake: Pour the warm caramel evenly over the baked shortbread crust. Spread it gently to cover the surface. Bake the assembly for an additional 10-12 minutes until the caramel is bubbly and set.
- Cool & Add Chocolate: Allow the baked base and caramel layer to cool for 10 minutes. Meanwhile, melt the 2 cups of chocolate chips in 30-second increments using a microwave or double boiler until smooth. Pour the melted chocolate over the caramel layer and spread it to create a glossy, even finish. Garnish with the remaining 1/2 cup extra pecans for decoration.
- Final Chill & Slice: Let the bars cool at room temperature for at least 1 hour to set properly. Then refrigerate them for 30 minutes more to ensure clean, neat cuts. Once chilled, slice into bars and serve.
Notes
- Use cold butter for the crust to ensure a crisp, flaky texture.
- Toast the pecans before adding them to enhance their flavor and crunch.
- For a richer caramel, use high-quality unsalted butter and heavy cream.
- Adjust the sea salt amount to taste for a perfect sweet-salty balance.
- Store bars in an airtight container in the refrigerator for up to one week.
- These bars can also be frozen for up to a month – thaw in the fridge before serving.
