Crock Pot Creamy Chicken Parmesan Soup is a comforting and hearty slow-cooked soup combining tender chicken breasts, savory chicken broth, diced tomatoes, and rich Parmesan cheese. Enriched with heavy cream and Italian seasoning, and finished with tortellini and fresh spinach, this soup is a perfect flavorful meal for any day.

Ingredients

Scale

Chicken and Broth

  • 1.5 pounds boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes

Aromatics and Seasonings

  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Dairy and Cheese

  • 1 cup heavy cream (or substitute half-and-half for a lighter version)
  • 1 cup grated Parmesan cheese

Additional Ingredients

  • 1 cup tortellini (fresh or frozen)
  • 1 cup fresh spinach
  • Fresh basil, for garnish

Instructions

  1. Layer Ingredients: Place the chicken breasts at the bottom of the Crock Pot. Add the diced onion and minced garlic evenly on top of the chicken.
  2. Add Liquids and Seasoning: Pour in the chicken broth and diced tomatoes into the Crock Pot. Stir gently to combine. Sprinkle Italian seasoning over the mixture and season with salt and pepper according to your preference.
  3. Slow Cook Chicken: Cover the Crock Pot and cook on low heat for 6 hours, or until the chicken is fully cooked and becomes tender enough to shred easily.
  4. Shred Chicken: Remove the chicken breasts from the Crock Pot and shred them thoroughly using two forks. Return the shredded chicken back into the soup base.
  5. Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese until the soup becomes creamy and well combined.
  6. Add Tortellini and Spinach: Mix in the tortellini and fresh spinach. Cover and cook on high for an additional 30 minutes to allow the tortellini to heat through and the spinach to wilt.
  7. Serve: Ladle the soup into bowls and garnish with fresh basil for a fragrant finish. Serve hot for a comforting meal.

Notes

  • This soup pairs wonderfully with crusty bread or garlic bread to make a complete meal.
  • For a lighter creaminess, substitute half-and-half for the heavy cream.
  • Feel free to add additional vegetables, such as carrots or bell peppers, for more nutrition and flavor.
