Use a spider or slotted spoon to separate chips as they fry to avoid sticking, and ensure not to overcrowd the pot to maintain the oil temperature and prevent greasy chips.
- Drain and cool: Remove the fried chips with a slotted spoon onto the paper towel-lined baking sheet. Let them cool completely before serving or storing.
