Instructions

  1. Prepare frying station: Fill a large, heavy-bottomed pot ½ to ⅔ full with vegetable or peanut oil. Line a baking sheet with layers of paper towels to absorb excess oil from the fried chips.
  2. Heat the oil: Heat the oil to 360°F, using an oil or candy thermometer to monitor the temperature. Adjust the stove flame to keep the oil temperature steady between 350°F and 360°F during frying.
  3. Cut wonton wrappers: Slice the wonton wrappers into triangles. Keep the unused wrappers covered with a clean kitchen towel to prevent drying out between batches.
  4. Fry the wonton chips: Add 6-7 wonton triangles (or more depending on your pot size) into the hot oil at a time. Fry for 60-90 seconds until they puff up and turn a deep golden brown. Use a spider or slotted spoon to separate chips as they fry to avoid sticking, and ensure not to overcrowd the pot to maintain the oil temperature and prevent greasy chips.
  5. Drain and cool: Remove the fried chips with a slotted spoon onto the paper towel-lined baking sheet. Let them cool completely before serving or storing.
