Cowboy Butter Steak Linguine is a hearty and flavorful pasta dish that combines perfectly cooked steak with rich, garlicky butter sauce, tossed with al dente linguine and fresh parsley for a satisfying meal that’s both rustic and elegant.

Ingredients

Scale

Steak

  • 1 lb sirloin steak or ribeye
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil

Pasta

  • 8 oz linguine
  • Salt, for pasta water

Cowboy Butter Sauce

  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon juice (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Steak: Season the steak generously with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes per side for medium-rare, or adjust time to your preferred doneness. Remove the steak from the pan and let it rest for 5 minutes before slicing thinly.
  2. Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions, usually 8-10 minutes, until al dente. Drain the pasta, reserving a small cup of pasta water for later use.
  3. Make the Cowboy Butter Sauce: In the same skillet used for the steak, reduce heat to medium. Add the butter and minced garlic. Sauté until the garlic is fragrant and lightly golden, about 1-2 minutes. Add the chopped parsley and lemon juice if using. Stir to combine and season with salt and pepper.
  4. Toss Pasta and Steak: Add the drained linguine to the skillet with the cowboy butter sauce. Toss to coat the pasta evenly, adding a splash of reserved pasta water if needed to loosen the sauce. Add the sliced steak on top and gently toss again to combine all ingredients.
  5. Serve: Plate the linguine topped with slices of steak and an extra sprinkle of fresh parsley for garnish. Serve immediately while hot.

Notes

  • Use a meat thermometer to check steak doneness if desired (130°F for medium-rare).
  • Reserve pasta water to adjust sauce consistency.
  • Feel free to substitute sirloin with ribeye or flank steak.
  • Lemon juice is optional but adds a nice brightness to the butter sauce.
  • For a spicier version, add crushed red pepper flakes to the butter sauce.
