Dry Ingredients
- 1/2 cup Rolled Oats, blended into powder (50g)
- 1 cup Almond Flour (96g)
- 2 tbsp Ground Flaxseed (14g)
- 1/4 cup Vanilla Protein Powder (30g)
- 1 tsp Cinnamon (5g)
- 1/4 tsp Nutmeg (1g)
Wet Ingredients
- 1/4 cup Almond Butter (60g)
- 2 tbsp Maple Syrup (30ml)
- 1/4 cup Unsweetened Almond Milk (60ml), divided
Coating
- 2 tbsp Powdered Sugar (16g)
- 1 tbsp Cinnamon (5g)
Glaze
- 2 tbsp Cream Cheese or Dairy-free Alternative (30g)
- 3 tbsp Powdered Sugar (24g)
- 1–2 tsp Unsweetened Almond Milk (5-10ml)
- Prepare the Dough: Blend the rolled oats into a fine powder to make oat flour. In a large bowl, combine the oat flour, almond flour, ground flaxseed, vanilla protein powder, cinnamon, and nutmeg. Mix all the dry ingredients thoroughly to evenly distribute the spices.
- Combine Wet and Dry Ingredients: Add the almond butter and maple syrup to the dry mixture. Stir well until the mixture looks crumbly but starts to come together.
- Add Almond Milk: Slowly pour in the almond milk, one tablespoon at a time, mixing after each addition. Continue until a sticky but firm dough forms. If the dough is too wet, add more almond flour; if too dry, add a bit more almond milk.
- Form and Coat Bites: Roll the dough into approximately 1-inch balls. In a separate bowl, mix together the powdered sugar and cinnamon for the coating. Roll each dough ball in the cinnamon-sugar mixture to coat evenly.
- Chill: Place the coated bites on parchment-lined tray or plate. Refrigerate for at least 30 minutes to allow them to firm up and hold their shape.
- Prepare the Glaze: In a small bowl, whisk together the cream cheese, powdered sugar, and 1 teaspoon of almond milk. Add more almond milk a little at a time until the glaze reaches a smooth, drizzle-able consistency.
- Decorate and Serve: Remove the bites from the fridge and drizzle the glaze over them using a spoon or piping bag. Serve immediately or store in an airtight container in the fridge for up to 4 days.
Notes
- For a dairy-free version, use a vegan cream cheese alternative.
- If the dough feels too sticky, chill it for 10 minutes before rolling to make handling easier.
- These bites can be stored in the freezer for up to 2 months; thaw in the fridge before serving.
- Feel free to swap maple syrup with honey or agave nectar if preferred.
- Adjust cinnamon amount according to your taste preference for a stronger or milder cinnamon flavor.
