Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it reaches the ideal temperature for baking the banana bread evenly.
  2. Mix wet ingredients: In a large mixing bowl, mash the overripe bananas until smooth. Add the melted vegan butter, maple syrup, almond or oat milk, and vanilla extract, then mix until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  4. Combine wet and dry: Gradually add the dry ingredients into the wet mixture, stirring gently until just combined—do not overmix to keep the bread tender.
  5. Prepare the swirl mixture: In a small bowl, combine melted vegan butter, light brown sugar, and cinnamon. Mix well until it forms a paste-like swirl.
