  • ½ cup diced yellow onion

  • 12 ounces bag of tortilla chips (Tostitos brand – use about of the bag)

Instructions

  1. Preheat the oven: Preheat your oven to 450°F (232°C). Spray a 12-cup capacity bundt pan thoroughly with cooking spray to prevent sticking and set it aside.
  2. Cook the ground beef and onions: In a large skillet over medium-high heat, add the lean ground beef, diced yellow onion, salt, and black pepper. Cook for 6–7 minutes, stirring occasionally, until the beef is no longer pink. Drain any excess fat from the skillet.
  3. Season the beef: Return the skillet to medium heat and stir in the ¼ cup water and 2 tablespoons of taco seasoning. Cook for an additional 2–3 minutes until most of the liquid has evaporated, then remove the skillet from heat.
  4. Layer the ingredients in the bundt pan: Start by layering half of the shredded Colby jack cheese evenly in the bottom of the prepared bundt pan. Next, add half of the cooked beef mixture on top of the cheese, followed by about one-third of the tortilla chips. Do not press the chips down tightly; keep them loose to maintain crispness.
  5. Add remaining layers: Add the remaining shredded cheese over the first chip layer, then spread the rest of the ground beef mixture evenly on top of the cheese. Finally, add another one-third of the tortilla chips on top, creating an even layer without overfilling the pan.
  6. Bake the nachos: Place the bundt pan in the preheated oven and bake for 10 minutes to melt the cheese and warm the layers thoroughly.
  7. Invert the bundt pan: Remove the pan from the oven and immediately cover it with a large heatproof plate. Carefully invert the bundt pan so the nachos transfer to the plate. Gently lift the pan away. If any cheese sticks to the bundt pan, replace it back onto the nachos.
  8. Add garnishes and serve: Top the nachos with your choice of optional garnishes such as sour cream, diced tomatoes, and chopped fresh cilantro. Serve warm and enjoy your festive appetizer!
