Ingredients

Scale

For the Buffalo Chicken Skewers

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup buffalo sauce
  • 810 wooden or metal skewers

For the Spicy Avocado Ranch

  • 1 ripe avocado
  • 1/2 cup ranch dressing
  • 12 teaspoons hot sauce (optional, for extra spice)
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into bite-sized pieces ensuring uniform size for even cooking.
  2. Thread the Chicken on Skewers: Carefully thread the chicken pieces onto the skewers, leaving a little space between each piece to allow heat circulation.
  3. Preheat the Grill: Heat your grill to medium-high heat, around 375°F to 400°F (190°C to 204°C), ensuring the grates are clean and lightly oiled to prevent sticking.
  4. Grill the Chicken Skewers: Place the skewers on the grill and cook for about 4-5 minutes per side, turning occasionally, until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with nice grill marks.
  5. Brush with Buffalo Sauce: During the last minute of grilling, generously brush the chicken skewers with buffalo sauce on all sides, allowing the sauce to warm and slightly caramelize.
  6. Prepare the Spicy Avocado Ranch Dip: In a blender or food processor, combine the ripe avocado, ranch dressing, lime juice, and hot sauce (if using). Blend until smooth and creamy. Season with salt and pepper to taste.
  7. Serve: Remove the skewers from the grill, let them rest for a couple of minutes, then serve warm with a side of spicy avocado ranch for dipping.

Notes

  • For a more intense buffalo flavor, marinate the chicken in buffalo sauce for 30 minutes before threading on skewers.
  • To prevent skewers from burning, soak wooden skewers in water for at least 30 minutes prior to grilling.
  • If you don’t have a grill, these skewers can be broiled or cooked on a grill pan on the stovetop.
  • The avocado ranch dip can be made ahead and stored in the refrigerator for up to 24 hours; add lime juice just before serving to maintain freshness.
  • Adjust the hot sauce amount in the dip according to your preferred spice level.
