Delightfully rich and chewy Buckeye Brownie Cookies combine the fudgy texture of brownies with a creamy peanut butter filling, all coated in a smooth chocolate shell. Perfectly balancing chocolate and peanut butter flavors, these cookies are a delicious treat for any occasion.

Ingredients

Scale

Brownie Cookies

  • 1 box brownie mix (about 18 oz)
  • Ingredients called for on brownie mix box (usually eggs, oil, water)

Peanut Butter Filling

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons unsalted butter, softened

Chocolate Coating

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon vegetable oil or shortening (optional, for smoother chocolate)

Instructions

  1. Prepare the Brownie Cookies: Preheat your oven to 350°F (175°C). Prepare the brownie batter according to the package instructions, mixing all required ingredients. Drop spoonfuls of batter onto a parchment-lined baking sheet to form cookies.
  2. Bake the Cookies: Bake the brownie cookies in the preheated oven for 10-12 minutes or until edges are set but centers remain soft. Remove from oven and allow to cool completely on a wire rack.
  3. Make the Peanut Butter Filling: In a medium bowl, mix together the peanut butter, powdered sugar, and softened butter until smooth and creamy. Adjust consistency with a little more powdered sugar if needed to achieve a firm yet spreadable texture.
  4. Prepare the Chocolate Coating: Melt the chocolate chips and vegetable oil together in a microwave-safe bowl in 30-second intervals, stirring after each until smooth, or melt using a double boiler on the stovetop.
  5. Assemble Buckeye Brownie Cookies: Spread or pipe the peanut butter filling onto the flat side of one cookie, then top with another cookie to create a sandwich. Repeat with remaining cookies and filling.
  6. Coat Cookies in Chocolate: Using a fork or dipping tool, dip each peanut butter-filled cookie sandwich into the melted chocolate until fully coated. Place on parchment paper to set. Refrigerate until chocolate hardens, about 30 minutes.

Notes

  • For a crunchier texture, add chopped peanuts to the peanut butter filling.
  • Use natural peanut butter for a more intense, fresh peanut flavor.
  • Ensure cookies are completely cooled before adding the filling to prevent melting.
  • The chocolate coating can be flavored by adding a pinch of sea salt or a few drops of peppermint extract.
  • Store cookies in an airtight container in the refrigerator for up to one week.
