Sausage and Gravy
- 1 pound ground pork sausage
- 4 ½ cups milk
- ½ cup flour
- 3 Tablespoons butter
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper
Biscuit Topping
- 2 (7.5 ounce) cans refrigerator biscuits or homemade drop biscuit dough
- Preheat and Prepare Pan: Heat your oven to 350 degrees Fahrenheit. Lightly spray a 13 x 9 inch glass baking dish with cooking oil spray to prevent sticking.
- Brown Sausage: In a medium-sized pot, cook the ground pork sausage over medium heat until browned and cooked through. Transfer cooked sausage to the prepared baking dish, then blot excess grease off the sausage with paper towels for a less greasy casserole.
- Make the Roux: Return the pot to medium heat and add the butter to the leftover sausage drippings. Once melted, sprinkle in the flour, salt, black pepper, and cayenne pepper. Stir continuously for 2-3 minutes until the roux begins to brown lightly, developing flavor and thickening power.
- Prepare Gravy: Gradually add the milk a little at a time to the roux, whisking constantly to maintain a smooth texture. Continue to cook over medium-low heat, stirring frequently until the gravy thickens to a creamy consistency over several minutes.
- Assemble Casserole: Pour the thickened gravy over the browned sausage in the baking dish, spreading evenly.
- Add Biscuit Topping: Separate the refrigerator biscuits and cut each biscuit into fourths, or divide your homemade biscuit dough into small pieces. Scatter the biscuit pieces evenly on top of the sausage and gravy layer.
- Bake: Place the casserole into the preheated oven and bake for 25-30 minutes, until the biscuits are puffed and golden brown on top.
Notes
- You can use homemade biscuit dough if preferred for a fresher biscuit topping.
- Adjust cayenne pepper amount to control spiciness of the gravy.
- For a lower-fat version, consider using turkey sausage and low-fat milk.
- Serve hot with eggs or fresh fruit for a complete breakfast.
- If the gravy is too thick, whisk in additional milk to reach desired consistency before baking.
