Cheese Crust

  • 1 cup blue cheese, crumbled
  • 2 tablespoons panko bread crumbs
  • ½ tablespoon butter

Instructions

  1. Prepare the marinade: In a 9×13” baking dish, whisk together olive oil, balsamic vinegar, salt, black pepper, chopped green onions, and brown sugar until well combined.
  2. Score and marinate the steak: Score the top of the flank steak with 1-inch sections to allow the marinade to penetrate. Place the steak in the marinade, making sure to spoon some of the marinade into the scored areas. Let the steak sit for 30–45 minutes per side to absorb the flavors.
  3. Preheat the broiler: Set the oven rack near the top position, ensuring it will not touch the meat. Preheat the oven to high broil.
  4. Broil the steak initially: Place the flank steak on a broiler pan, scored side facing up. Broil for 3 minutes, then flip the steak and broil the other side for an additional 3 minutes.
  5. Prepare the breadcrumb mixture: Melt the butter and combine it with the panko bread crumbs. Have the crumbled blue cheese ready to use.
  6. Add the cheese crust: Flip the steak again so the scored side faces up. Press the blue cheese firmly into the scored sections and then sprinkle the buttered panko crumbs evenly over the top.
  7. Final broiling: Return the steak to the broiler and cook for an additional 5 minutes, or until the blue cheese is melted and the crust is golden brown.
  8. Rest and serve: Remove the steak from the oven and let it rest for 10–15 minutes. Slice thinly against the grain and serve warm for the best texture and flavor.
