Ingredients

Scale

Crust

  • 1 tube Refrigerated Sugar Cookie Dough (16.5 oz)

Filling

  • 8 oz Cream Cheese (softened)
  • 2/3 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 8 oz Whipped Topping (thawed)

Toppings

  • 12 oz Fresh Raspberries (3 to 4 cups)
  • 1 dry pint Fresh Blueberries (about 2 cups)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the cookie crust.
  2. Prepare Dough: Open the tube of refrigerated sugar cookie dough and slice it into 1/4 inch thick pieces.
  3. Shape Crust: Arrange the cookie dough slices on a lightly greased 12-inch pizza pan, pressing them together evenly to form a single crust layer. For decoration, reserve one slice to cut into a star shape after baking if desired.
  4. Bake Crust: Bake the assembled cookie crust for 11 to 12 minutes or until lightly browned. Then remove and allow it to cool completely. Meanwhile, wash and dry the raspberries and blueberries.
  5. Make Filling: In a mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth. Gradually beat in half of the whipped topping. Then gently fold in the remaining whipped topping until fully combined and fluffy.
  6. Spread Filling: Spread just under half of the cream cheese mixture evenly over the cooled cookie crust, covering edge to edge.
  7. Decorate with Blueberries: Use blueberries to outline the perimeter of the pizza crust, creating the blue portion of the American flag. Place the star-shaped cookie cutout atop this area for the star field.
  8. Create Red Stripes: Arrange raspberries on the remaining areas to form seven horizontal red stripes across the pizza.
  9. Add White Stripes: Using the rest of the cream cheese mixture, pipe white stripes between the raspberry stripes to complete the flag pattern.
  10. Chill and Serve: Refrigerate the fruit pizza until ready to serve to allow the filling to set and flavors to meld.

Notes

  • Ensure the cookie crust is completely cooled before spreading the filling to prevent melting.
  • For the star cookie decoration, use a small star-shaped cookie cutter and bake separately for an easy patriotic touch.
  • Fresh berries work best for vibrant color and flavor; rinse and dry them thoroughly.
  • This dessert is best served chilled and should be kept refrigerated until serving.
  • Make ahead the crust and filling to save time on the day of serving.
