Perfect as a healthy snack or appetizer, these green beans are air-fried to golden perfection, preserving their vibrant freshness and delivering satisfying texture without deep frying.

Ingredients

Scale

For the Green Beans

  • 1/2 lb. green beans, trimmed
  • 2 tbsp. all-purpose flour
  • 1 cup panko bread crumbs
  • 2 large eggs
  • Olive oil cooking spray

For the Dipping Sauce

  • 1 scallion, very thinly sliced
  • 2 tbsp. water
  • 1 tbsp. low-sodium soy sauce
  • 1 tbsp. mirin
  • 1 1/2 tsp. fresh lemon juice

Instructions

  1. Coat the Green Beans: In a large bowl, toss the trimmed green beans with the all-purpose flour until they are evenly coated. In a shallow bowl, break up the panko breadcrumbs into smaller bits using your hands to help them adhere better to the beans. In another shallow bowl, beat the eggs until blended smoothly.
  2. Prepare for Air Frying: Shake off any excess flour from the beans. Dip each bean into the beaten eggs, then roll them gently in the panko breadcrumbs, pressing lightly so the coating sticks well.
  3. Air Fry the Beans: Spray the air fryer basket with olive oil cooking spray. Arrange the coated beans in a single layer, spacing them about 1/4 inch apart to allow even cooking. Spray the tops of the beans lightly with cooking spray. Set the air fryer to 350°F and cook for 7 to 9 minutes, flipping the beans halfway through cooking until the panko crust is golden and the beans are tender.
  4. Make the Dipping Sauce: While the beans cook, whisk together the very thinly sliced scallion, water, low-sodium soy sauce, mirin, and fresh lemon juice in a medium bowl until well combined.
  5. Serve: Serve the crispy green beans hot alongside the tangy dipping sauce for a delicious and light appetizer or snack.

Notes

  • Ensure beans are spaced properly in the air fryer basket to allow hot air circulation for crispiness.
  • Using low-sodium soy sauce helps reduce salt content without compromising flavor.
  • Fresh lemon juice adds brightness and balances the umami of the dipping sauce.
  • For extra crispiness, make sure to spray the beans lightly with olive oil spray before air frying.
  • This recipe can be doubled or tripled to serve more people, adjusting cooking in batches.
