Cookie Dough
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Filling
- 1 cup brown sugar
- 1 tablespoon cinnamon
Icing
- 1 cup powdered sugar
- 1–2 tablespoons milk
- Sprinkles (optional, for decoration)
- Cream Butter and Sugars: In a large bowl, cream together the softened butter, packed brown sugar, and granulated sugar until the mixture is light and fluffy, about 2 to 3 minutes using an electric mixer.
- Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then stir in the vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this to the wet ingredients, mixing just until combined to avoid overworking the dough.
- Prepare Filling: In a small bowl, mix together the brown sugar and cinnamon for the filling and set aside.
- Divide and Roll Dough: Divide the dough into two equal portions. On a lightly floured surface, roll out one portion to about 1/4 inch thickness.
- Cut Dough into Rectangles: Cut the rolled dough into 3×4 inch rectangles. Repeat rolling and cutting with the second portion of dough.
- Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Fill Cookies: Place one rectangle on the baking sheet, spoon about one tablespoon of the cinnamon brown sugar filling in the center. Cover with a second dough rectangle and press the edges together to seal the cookie tightly.
- Assemble All Cookies: Repeat the filling and sealing process until all cookie rectangles are paired.
- Bake Cookies: Bake for 12 to 15 minutes, or until cookies are lightly golden at the edges. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare Icing: Whisk the powdered sugar with 1 to 2 tablespoons of milk until smooth and able to drizzle. Drizzle this over the cooled cookies and add sprinkles if desired.
Notes
- Make sure the butter is softened to room temperature to achieve a creamy consistency when mixing.
- Do not overmix the dough after adding flour to keep cookies tender.
- Sealing the cookie edges well will prevent filling from leaking during baking.
- Allow cookies to cool completely before icing to prevent the icing from melting.
- Use parchment paper on baking sheets for easy cleanup and to prevent sticking.
- Store cookies in an airtight container to maintain freshness for up to 5 days.
