Cookie Dough

Instructions

  1. Cream Butter and Sugars: In a large bowl, cream together the softened butter, packed brown sugar, and granulated sugar until the mixture is light and fluffy, about 2 to 3 minutes using an electric mixer.
  2. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then stir in the vanilla extract.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this to the wet ingredients, mixing just until combined to avoid overworking the dough.
  4. Prepare Filling: In a small bowl, mix together the brown sugar and cinnamon for the filling and set aside.
  5. Divide and Roll Dough: Divide the dough into two equal portions. On a lightly floured surface, roll out one portion to about 1/4 inch thickness.
  6. Cut Dough into Rectangles: Cut the rolled dough into 3×4 inch rectangles. Repeat rolling and cutting with the second portion of dough.
  7. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Fill Cookies: Place one rectangle on the baking sheet, spoon about one tablespoon of the cinnamon brown sugar filling in the center. Cover with a second dough rectangle and press the edges together to seal the cookie tightly.
